Buckwheat pizza dough

I have had coeliacs disease for 12+ years and over that time, I have tried so many pizza base recipes ๐Ÿ™ˆ and have always ended up going back to the store bought wraps because I haven't found a good base... UNTIL NOW! ๐Ÿคฉ

Ingredients:

1 cup buckwheat flour

3 tbs arrowroot (tapioca) flour

1/4 cup olive oil

1 tbsp apple cider vinegar

1 tsp baking powder

2 tbsp savoury seasoning (season recipe on our website or you could use fresh herbs)

1 cup water

Method:

Place all ingredients in a mixing bowl and stir until combined. The mixture should resemble a cake batter and be fairly runny.

Spread mixture onto a lined baking tray and place in your oven to cook for 15-20 minutes or until the top is firm and golden (the longer you cook cook it, the crisper the base will be).

Take the base out of the oven and add your favourite toppings. Then return it to the oven for a further 10-15 minutes until your pizza toppings are cooked through.

I like to add all of the trimmings like roasted eggplant + roasted sweet potato + olives + capers + capsicum + cauliflower + zucchini and a light sprinkling of fetta... I love my pizza piled high with veggies! ๐Ÿคฃ
