Cheesy Veggie & Bean Pasta

    

Looking for a NEW lunch idea?!
Well this creamy pasta salad which you can enjoy hot or cold is seriously yummy! Fresh and filling... the best lunch combination!

Ingredients:

  • 300gr pasta 
  • can of mixed beans (drained)
  • 1/2 cup of chopped cherry tomatoes
  • 1/2 cup of fresh corn kernels
  • 1 small red capsicum
  • 1 cup of chopped kale (de-stemmed)
  • chopped parsley 


Creamy Sauce:

  • 1/2 cup of unhulled tahini (I get mine from @weighnpay which is so creamy)
  • 1/3 - 1/2 cup of water
  • 2 tbsp nutritional yeast
  • salt & pepper
  • optional:
  • 1/2 tsp dried chives / 1/4 tsp smoked paprika / splash of lemon juice


Method:

 

  1. Cook pasta as per instructions on packet and drain.
  2. In an empty glass jar, add tahini, water, nutritional yeast, salt, pepper, smoked paprika and lemon juice (if using). Place the lid on the jar and shake. Add more water to the sauce if you want it thinner.
  3. To a large bowl, add the cooked pasta, beans, veggies and creamy sauce and mix thoroughly until it is combined.
  4. Enjoy!
