Choc Chip Protein Balls


These are seriously yummy! I have found it difficult finding alternative ingredients to dates and other dried fruit when making bliss balls (low fodmap problems!) but these protein balls are the perfect solution!

Ingredients:
1/4 cup toasted coconut flakes **
1/2 cup oats (I use GF oats)
1/4 cup peanut butter
1/4 cup flaxseed meal
1/4 cup vanilla protein powder
2 tbsp coconut oil (melted)
1 tbsp rice malt syrup (adjust depending on the sweetness of your protein powder)
handful of chocolate buttons (I use vegan dark choc)
sprinkle of salt
vanilla paste

Method:
1. Add all ingredients to a food processor / Thermomix and blitz until the mixture becomes sticky and comes together. Add a dash of water if needed.
2. Roll into balls and let set in the fridge for 2 hours.
3. Enjoy!

** if you sub for desiccated / shredded coconut, you will need to add a dash of water so the mixture comes together
