Date and Nut Truffles


Simple... moreish... YES ploise! 🙋🏼‍♀️

I often [99.99% of the time] press my mixture into a silicone baking tray and chop into pieces rather than roll into balls and cover in coconut... either way, no matter what shape or adventure you choose with making these... they are yummy 🙌🏻❤️

⭐️ Ingredients ⭐️
200gr medjool dates (pitted)
1/2 cup of nuts (toasted is best! pistachio, walnut but my go-to is almond or macadamia)
2 tbsp cacao powder
1 tbsp coconut oil
1 tbsp sweetener (honey or maple syrup)
1/3 cup desiccated coconut (for rolling)

⭐️ Method ⭐️
Blend dates, nuts, cacao and coconut oil together in a food processor until the bnutrs are finely chopped and the mixture resembles a thick paste,
Press mixture into a lined baking dish or roll mixture into balls and roll into coconut.
Refrigerate and enjoy!
