LCM Bites


I am always looking for yummy and healthier snack options that are simple to prepare for my kids (and for me!). This is a yummy slice! The maca powder is optional but gives a slight caramel flavour. You could add coconut, melt chocolate on top or leave it as is.


  • 1 cup puffed brown rice
  • 1.5 cups puffed white rice (rice bubbles)
  • 1.5 tbsp hemp seeds
  • 1.5 tbsp flaxseed meal
  • 1/2 tsp maca powder (optional)
  • 1/4 cup rice malt syrup (or other sweetener)
  • 1/4 cup peanut butter (or almond butter)


  1. In a large bowl, combine puffed brown rice, puffed white rice, hemp seeds, flaxseed meal and maca powder and stir.
  2. In a glass bowl, add rice malt syrup and peanut butter and sit over a pot of boiling water (bain marie style) and stir until melted. Alternatively, you could use a microwave in 30secs bursts, stirring in-between to avoid burning. Remove from heat.
  3. Pour wet ingredients into bowl and stir to combine.
  4. Press mixture into a baking tray (I line our tray with a silicone baking mat or use baking paper) and bake in oven 180oC for 10 mins.
  5. Allow the slice to cool before cutting and store at room temperature.
