๐ŸŒ VEGAN BANANA BREAD ๐ŸŒ

I thought I would share this recipe with you today in case you are meal prepping over the weekend ๐Ÿค—

A friend of mine sent me this recipe a couple of week's back ... and we have cooked it countless times since ๐Ÿ˜
True story, I made this twice this week as I cooked a batch to take a photo but it was all gone before I could take a snap ๐Ÿ“ธ๐Ÿ˜†
Itโ€™s that good ๐Ÿ˜‹

Ingredients:
1 3/4 cups flour eg. spelt (I use a GF flour)
3/4 cup coconut sugar
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
3 very ripe bananas (1 level cup)
1/2 cup yoghurt (or 1/2 - 3/4 cup milk with 1 tbsp apple cider vinegar)
1/4 cup vegetable oil (I use coconut oil)
2 tsp lemon juice
1 tsp pure vanilla extract
optional: 1/3 cup chopped raw nuts (I donโ€™t add nuts so this can be a lunchbox treat)

Method:
Preheat oven 180oC - mixture for 9 inch spring-form tin but I use a loaf tin.
In a bowl, stir all of the dry ingredients together. In a separate bowl, mix all of the wet ingredients together and then add the wet ingredients into the dry bowl. Fold mixture together until combined (small lumps are fine... weโ€™re not perfect!).
Bake for 35-40 mins.
