Green Pancakes




These yummy pancakes are GF, V, nut & sugar free but I assure you they are delicious and loved by my girls! 😍
You can leave out the spinach and add in a sweetener to the pancake mixture but we love these just as they are.
We enjoy these layered with strawberry chia jam (recipe here) 😋


  • 1 cup buckwheat flour
  • 2 flax eggs * (or eggs)
  • 1 banana (mashed)
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp cinnamon or mixed spice
  • pinch of salt
  • 1/2 cup milk (we use coconut milk - add more milk for a runny consistency)
  • big handful of spinach

* to make a flax egg: mix 1 tbsp of ground flaxseed meal with 3 tbsp of water. Mix together, and let sit in your fridge for 15 minutes to set up and thicken or use boiling water and it will thicken within minutes.

In a blender / Thermomix, mix all ingredients together until smooth. Pour mixture in a pan and cook 👩‍🍳
