Last month we celebrated the milestone of my youngest daughter turning TWO!

As the four of us blew out this candle (well it was actually a no. 2 sparkler), my heart was bursting with gratitude for our little family and the beautiful life that WE have created - surrounded by our family and friends. And how much we have grown together in the past 12 months - it has been a bumpy roller coaster ride but we did it!

For her birthday cake, I decided to tackle a three layered vegan vanilla sponge cake, with layers of cashew cream and topped with sweet potato chocolate icing and hopper foods sprinkles. Here are the recipe links:

I have certainly learnt from the first few birthday parties that I organised for my daughter's, that for us, simplicity is key. We love being able to share the day and celebrate their birthday with our loved ones but making it a BIG celebration causes too much stress and that isn't enjoyable. We love having a small party with a small selection of healthy treats which equals no fuss or stress so that we can just enjoy the time spent together.
