weekly meal prep 7 march 2021

I am now three weeks out from my next triathlon 🤩 so I am focused on nourishing my body to help with recovery from training... this meal prep helps me do that throughout our busy weeks 🙌🏻

As a little update, I am still following low FODMAP eating as per my dietician but I have been doing challenges of particular foods to help determine what might be flaring up my gut (that is a work in progress)... I might put that on hold for the next couple of weeks whilst I focus on my training as it is tricky training through the discomfort & fatigue when I am not feeling 100% 🙈😣
Low FODMAP eating has definitely improved my symptoms which were a daily challenge beforehand 🙏🏻

Anway, I am already excited for dinner as these 'meat'balls are super yummy! 😋
